Global Cromova G-21, 16cm Flexible Boning Knife

The Top Rated Boning Knives – Attention Fish Lovers

Because you just don’t use a chef’s knife to fillet fish…

The humble boning knife…designed with less-than-easy jobs in mind, maneuvering effortlessly around bones and making your life that much easier.

If you’ve ever tried removing the breast from a whole chicken with a standard chef’s knife, you’ll know that it’s just about impossible not to mess up the whole piece of meat.

As one of the first steps in food prep, boning is something that all cooks face on a daily basis, so the boning knife is not just for fish lovers, but in essence, for those of us who love to cook.

When I first started experimenting in the kitchen, I didn’t really get the big fuzz over these knives, but after beautifully butterflying my first proper chicken breasts with one, the world just seemed to make a little more sense.

How to choose a Boning Knife?

  • The number one consideration for your boning knife is, and always will be, flexibility. Your uses for the knife will determine the flexibility you need from your knife.
  • The stiffer the build, the more force you can apply for precise cutting.
  • If you’re going to be filleting fish, opt for a more flexible build that allows the blade to slide through the meat while maintaining the texture.
  • The Top Rated Boning Knives are at least 6 inches long, super sharp and agile

The Point is:

Boning knives are NOT chopping knives, and doing so could actually be very dangerous. These are specialty knives and need to be treated as such.

Now…you’re probably ready to explore the options for the top rated boning knives?

The Top Rated Boning Knives Available To You:

Global Cromova G-21 Flexible Boning Knife – The Winner!

For a full metal experience, the Global Cromova might be a bit of a splurge, but it’s worth every single cent spent.

It gives you just enough flexibility and a super sharp tip, so it will do delicate boning and pierce through silver skin with the utmost of ease.

I love the fact that it offers a solid and sturdy blade that’s still flexible enough for precision cutting. If you can afford it, I’d definitely recommend it!

Wusthof Classic 6 Inch Flexible Boning Knife – The Runner Up!

Coming in at a heavier weight than the Fibrox, the Wusthof Classic Boning Knife is a very solid performer. I like the feel of the handle because it’s easy to grip onto, but the tip that lacks sharpness proved to be an issue for me because I couldn’t really use it to easily pierce silver skin.

It’s still one of the Top Rated Boning Knives out there, and if it wasn’t for the tip issue, it would have easily come in as number one.

Victorinox Forschner Semi Stiff Knife – The Bronze-Medlar!

Super sharp straight out of the box, the Forschner 6 inch boning knife is (as the name implies) a little stiffer and offers you a curved blade. I like the fact that it’s very easy to handle and has an ergonomic handle that won’t slip when it’s wet.

If you’re more of a red-meat processor, you’ll love this boning knife, but I wouldn’t recommend it for more delicate meat like chicken or fish.

Victorinox 6 Inch Fibrox Flexible Boning Knife – The Budget Buy!

I love the fact that this knife is comfortable to use and allows you to make precision cuts, time after time. It offers superb balance and just enough flexibility so that you can really get in around tight joints.

I’m all for excellent quality at attractive prices, and that’s exactly what the Fibrox Boning Knife brings to the table.

Mundial Boning Knife – The Super Flexible Boning Knife!

Okay so with the Wusthof I had an issue with the rather blunt tip, but this boning knife tackled that problem head-on with its sharp tip. I must say that the Mundial is a little too flexible to my liking because it almost feels like I don’t have control over the knife and the heavy handle isn’t exactly easy to grip once it gets covered in chicken fat.

Shun Gokujo Filet Knife -The Smooth Cutter!

This knife was originally designed to replicate a Samurai blade, so I get the fact that it costs a lot, but the looks are about all that counts in its favor. The tip doesn’t really want to pierce silver skin, but I did like the smooth, long cuts it was able to deliver. This knife has an all-out curve that makes it super hard to maneuver and the fact that it’s not really flexible just makes things worse.

MAC Boning Knife – The Awkward Chef Series Boning Knife!

I was a bit taken by the very large handle of the MAC Chef Series Boning knife that actually gives you the feel of a hunting knife. The blade is super wide, so it’s hard to get it into the spaces where you need it to go and it will only slice in ONE direction.
